Only the best pork cuts are used to make this Friulian salami. The meat is minced with a medium grain in order to preserve its exceptional flavour and it is lightly spiced and flavoured with garlic. There is just enough fat to keep the mixture soft, but it amounts to no more than 20% of the total weight. The salami is great for use in hors d’oeuvre, snacks and cold meat selections. It can be covered with baking paper and stored in the refrigerator.
