Peta di Noè

Peta di Noè is a type of meatball made with minced pork and goat meat that is flavoured with garlic, salt and coarse ground pepper. It is rolled in flour, then smoked. Pitina can be sliced and eaten cold, cooked with vinegar in a frying pan and served with grilled polenta or browned with onions in butter and used to add flavour to potato soup. Pitina is a traditional product from the Tramontina Valley, which lies in the Carnic Prealps in the Province of Pordenone.
