“Coppa” is made by using a blend of salt, pepper and spices to flavour the upper part of the neck and part of the shoulder of a pig (known as the pork “loin”). Coppa is very fragrant and it has a sweet, delicate flavour with a slightly piquant twist. Magnificent on its own with nice warm bread, coppa also goes very well with mild cheese and pickles.
