This thick “top cut” slice of prosciutto comes from the top part of the ham that has been aged for 16-17 months, which has a fuller flavour and a more compact texture. In order to keep the cuts as fresh as possible, the prosciutto is sliced and vacuum-packed at the time when an order is made. The fat content of the thick prosciutto slices can be varied to cater to individual tastes.
