Thick “shin cut” slice of DOP Prosciutto di San Daniele that has been aged for 16-17 months. The “shin” is the end part of prosciutto. In order to keep the meat sweet and soft, it is not sliced until an order is made. Varying percentages of fat can be selected for the thick prosciutto slices, depending on individual tastes.
