Pignoletto corn flour is obtained from ancient varieties of red vitreous pignoletto corn, harvested from cobs selected manually one by one and dried in cages.

This flour is one of the oldest varieties, resulting in a polenta with a rustic, intense flavour, at times almost bitter, perfect for accompanying cheese, frico and cured meats.
